You’ll never learn how to properly EQ, compress, limit, saturate, use bus sends for effects, the different types of EQ and compression, the different types of effects and saturation etc etc. GB doesn’t offer much in terms of mixing and mastering the plugins are very very minimal and most people just use presets and the GB presets are pretty crazy loaded because the plugins are so minimal. Logic Pro, Rode NT1 (I recommend not buying the NT1-A, and getting the normal NT1, it’s a better mic in my opinion) a Focusrite interface and a pair of Mackie CR5s is a great beginner set up that can get you some really impressive results and has what you need to learn how to make good music. If you're not there, don't worry about spending the money yet. For me, I used GB for years and learned all its quirks and found it very intuitive – but once I started learning what I was doing, trying to mix, and started hitting walls because of the limitations in GB, I had to move on.
I'm sure there are more in-depth rundowns of all the differences elsewhere on the web. Clip gain, Flex Time and Pitch, drum replacement, coloring tracks, making folders – pretty sure none of that is in GB, iirc. You have way more practical functions immediately available to you. You need a mixer window so you can see everything that's going on and all the plugins on everything all in one overview. Also, when you first get Logic, it runs in a simplified mode that has advanced stuff disabled, so you can transition easier from GB. It takes some getting used to, but it's way better than everything being hidden behind collapsed panes or simply not being shown in GB. You have way more information at your fingertips.
